This dairy-free ice cream tastes especially good made with fresh, locally grown peaches when they’re in season. Experiment with this recipe by using other seasonal fresh fruits, including equal amounts of cantaloupe or honeydew chunks or berry mixtures.
Preparation time: 5 minutes
Freezing time: 35 minutes
Yield: 10 servings
Special equipment: Ice cream maker
6 cups vanilla almond milk (or your choice of nondairy milk)
3 cups peeled and sliced fresh or frozen peaches
1 cup sugar
2 tablespoons arrowroot starch
2 teaspoons pure vanilla extract
1/4 teaspoon salt
Process all the ingredients except peaches in a blender until smooth and creamy. Add the peaches next and pulse once or twice, creating small chunks of peach.
Freeze the mixture in a hand-operated or electric ice cream maker for approximately 35 minutes (or according to your machine’s manufacturer’s instructions) and serve.
For a stronger peach flavor, replace 1 cup almond milk with 1 cup peach nectar.
