You can vary these gluten-free peanut butter chocolate bars in many ways. Swirl some of your favorite jam into the bars just before baking them or top the finished bars with a thin layer of jam and some ground peanuts. You can also top the bars with chocolate chips, peanut butter chips, or white chocolate chips before baking them instead of frosting them.

Yield: 36 bar cookies
2 cups plus 1/2 cup creamy peanut butter
1/2 cup packed brown sugar
1/2 cup powdered sugar
1/3 cup granulated sugar
1/4 cup honey
2 eggs
1 teaspoon vanilla
One 12-ounce package (2 cups) semisweet chocolate chips
1 cup chopped peanuts
Preheat the oven to 350 degrees F.
Line a 13-x-9-inch pan with foil and set aside.
In a large bowl for a stand mixer, combine 2 cups peanut butter, brown sugar, powdered sugar, granulated sugar, honey, eggs, and vanilla.
Beat well until combined.
Spoon and spread the mixture into the prepared pan. Bake for 15 to 25 minutes, or until the bars are set and light golden-brown around the edges.
Remove them from the oven and place them on a cooling rack.
In a medium, microwave-safe bowl, combine the chocolate chips with 1/2 cup peanut butter. Microwave on high for 1 minute; remove and stir.
Continue microwaving the mixture on high for 1-minute intervals, stirring after each interval, until the mixture is melted and smooth.
Pour the chocolate mixture over the warm bars and spread to cover. Sprinkle with chopped peanuts and let stand until cool.
Cut into bars to serve.
