Spicy Indian Chickpea Stew

This spicy Indian chickpea stew mixes Indian spices with the chickpeas to create a wonderful entree. Make spicy Indian chickpea stew when you want something really flavorful, and serve it with basmati rice on the side.

Cooking time: 15 minutes


Yield: 4 servings


1 medium onion


1 clove garlic


2 tablespoons olive oil


1 teaspoon ground coriander


1/2 teaspoon ground cumin


1/8 teaspoon turmeric


Pinch of cayenne pepper


2 cups cooked chickpeas


1/2 teaspoon salt


1/4 teaspoon black pepper


1 lemon


Fresh cilantro



  1. Chop the onion.



  2. Peel and mince the garlic clove.



  3. Heat the olive oil in a large skillet over medium-high heat.



  4. Add the onion and garlic.



  5. Cook until soft.



  6. Add the coriander, cumin, turmeric, and cayenne pepper.



  7. Cook for 1 minute.



  8. Stir in the chickpeas, salt, and pepper.



  9. Cook until the chickpeas are heated through.



  10. Remove from the heat.



  11. Juice the lemon.



  12. Mince the cilantro.



  13. Stir 1 teaspoon lemon juice and 2 tablespoons cilantro into the stew.
