Masala Chai Tea with Soymilk

Masala chai — or “chai” for short — is a traditional hot beverage from India made by brewing tea with spices, milk (in this case, soymilk as an alternative to dairy products), and a sweetener. Change or add spice to suit your own taste.


Preparation time: 15 minutes


Yield: Four 1-cup servings


3 cups water


2 cinnamon sticks


6 cardamom pods


6 whole cloves


1/4 inch of ginger root, peeled and sliced thinly


Several peppercorns


1/4 cup loose black tea (such as Darjeeling)


1 cup plain or vanilla soymilk (add more if the tea is too strong)


3 tablespoons sugar


Vanilla, almond, nutmeg, bay leaves, anise, or fennel and allspice (optional)



  1. Combine the water, spices, and tea in a 2-quart saucepan. Cook over high heat until boiling. Turn off the heat and let the mixture steep for at least 10 minutes.



  2. Strain the tea mixture and discard the spices. Add the soymilk and sugar to the strained tea mixture and stir well.



  3. Reheat the tea until piping hot and serve.
