You will be pleasantly surprised at how simple this gluten-free entrée is to prepare — and it tastes great! Use bone-in chicken pieces so the meat stays moist during broiling. If you opt to put the chicken on the grill, baste frequently with pan juices.

Cooking time: 35 minutes
Yield: 4 servings
Nonstick cooking spray
Four 6-ounce bone-in chicken thighs
Juice from 1 lemon
4 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder
5 teaspoons sugar
2 tablespoons brown mustard
4 teaspoons honey
Preheat the broiler. Spray a 9-x-9-inch baking dish with nonstick spray.
Place the chicken, skin side up, in the baking dish. Squeeze the lemon juice over the chicken.
Melt the butter in a small saucepan. Remove the saucepan from the heat and stir in the salt, pepper, and garlic powder. Spoon the butter sauce over the chicken thighs.
Broil the chicken for 20 minutes, turning once.
In a small bowl, stir together the sugar, mustard, and honey. Brush half of the mixture over the chicken pieces and return to the broiler for 10 minutes. Turn the chicken pieces over, brush with the remaining sauce, and broil for 5 minutes more.
