This caramel apple smoothie has a creamy light brown color, and it really does taste like a caramel apple in smoothie form (or, at least, it’s pretty darn close). All that’s missing is the stick!
Preparation time: Less than 10 minutes
Yield: 2 12-ounce servings
1 cup apple juice (use fresh apple cider or tart, freshly squeezed apple juice, if available)
2 cups nonfat vanilla frozen yogurt
1 medium apple (use a tart variety, such as Granny Smith)
2 tablespoons caramel sauce or topping
5 or 6 ice cubes
Core, peel, and dice the apple.
Place apple juice, frozen yogurt, 1/2 cup diced apple, caramel sauce, and ice cubes in a blender.
Blend on high speed.
Stop after 15 seconds to scrape the sides of the blender with a spatula and push the solid ingredients down to the bottom of the blender.
Repeat Steps 2 and 3 for about a minute or until smooth.
Pour into two tall (16-ounce) tumblers.
Serve immediately with iced tea spoons and straws.
