How to Make Gluten-Free No-Bake Lemon Squares

Sometimes when you’re expecting company, you simply don’t have enough time to make a complicated dessert, yet you want something delicious to serve. These gluten-free squares take just minutes to put together. Be sure to allow for chilling time, both for the dessert and for yourself!


You can vary this recipe using different flavors of cookie and frosting.


Check to see how many cookies are in the package you buy — you may need more than one box.


Tools: Electric mixer


Preparation time: 10 minutes


Freezer time: At least 3 hours


Cooking time: None


Yield: 9 servings


1 2/3 cups gluten-free lemon cookie crumbs (about 12 cookies pureed in a blender)


2 tablespoons granulated sugar


3 1/2 tablespoons butter, melted


1 can ready-to-spread lemon frosting


1 cup small-curd cottage cheese


1 cup sour cream



  1. In a small bowl, use a fork to blend the cookie crumbs, sugar, and butter.



  2. Pat the crumbs into a 9-inch square pan, reserving 1/4 cup for the topping.



  3. Put the frosting, cottage cheese, and sour cream into a large mixing bowl. Use the mixer to beat the ingredients on high until they’re well blended.



  4. Spoon the cream mixture on top of the crust.



  5. Sprinkle the reserved crumbs on top of the cream mixture.



  6. Cover the pan with foil and freeze for at least 3 hours. Remove the squares from the freezer 20 minutes before cutting and serving.
