Baked Dairy-Free Garlic Spread

If you like garlic this simple (two ingredients!) spread is a dairy-free delight. Smear the baked garlic on fresh French or Italian bread. Making this spread will make your house smell wonderful — although it may not do the same for your breath!

Preparation time: 5 minutes

Cooking time: 60 minutes

Yield: 4 servings

1 large bulb of garlic

2 teaspoons olive oil

  1. Preheat the oven to 350 degrees. Pull the outer, loose layers of tissue off the garlic bulb, leaving enough so that the cloves remain intact.

  2. With a sharp knife, cut off the top of the bulb (about 1/4 inch of the top) to expose the tops of the cloves inside. Drizzle the tops of the cloves with the olive oil.

  3. Wrap the bulb loosely in aluminum foil, seal the foil completely, and place in the preheated oven.

  4. Bake for about 1 hour, or until the cloves are soft. Remove from the oven.

  5. Place the garlic bulb on a small serving dish. Lift the softened cloves out of the bulb with a dinner knife and smear them on slices of bread. If the cloves are difficult to remove from bulb, squeeze the bulbs to loosen them first.
