Jump-Start Juice for a Nondairy Breakfast Boost

Start your day off right with a glass of healthy juice as an alternative to your favorite dairy products. Fruits and vegetables pack this juice with vitamins A and C, pineapple adds a touch of sweetness, and carrot juice adds a splash of color.


Preparation time: 3 minutes


Chilling time: 2 hours, or simply pour the beverage over ice


Yield: Four 1-cup servings


2 cups freshly squeezed orange juice (2 to 3 medium oranges)


1 cup fresh carrot juice


1 cup of pineapple juice (canned pineapple juice is okay)


Several mint leaves




  1. Combine juices in a glass pitcher and stir gently to mix thoroughly.




  2. Chill for an hour or two before serving, if desired.




  3. Pour into serving glasses and garnish each glass with mint leaves.




Replace all or part of the pineapple juice or carrot juice with orange juice or fresh spinach liquefied in a juicer. Play with the proportions to get the flavor as you like it.
