Speedy Beef Stew

Starting with cooked beef tips and cooked, diced potatoes, you can make a robust beef stew in less than 20 minutes. For this beef stew, look for the potatoes in your supermarket’s produce section.


Preparation time: 5 minutes


Cooking time: 10 minutes


Yield: 4 servings


1 medium red bell pepper


1 medium onion


1 garlic clove


1 tablespoon vegetable oil


1 package (about 1 pound) refrigerated, cooked, diced potatoes


1 package (about 17 ounces) fully cooked beef tips with gravy


1/2 cup beef broth


1/4 teaspoon pepper



  1. Core, seed, and dice the bell pepper.



  2. Thinly slice the onion.



  3. Mince the garlic clove.



  4. Heat the oil over high heat in a large sauté pan.



  5. Add the bell pepper, onion, and garlic.



  6. Sauté the vegetables 5 minutes or until tender.



  7. Add the potatoes, beef tips with gravy, beef broth, and pepper.



  8. Cover and simmer 5 minutes or until the potatoes and beef are hot.



  9. Serve immediately.
